2. Spiced Bok Choy Slaw
To a big salad bowl, add carrots, bok choy, cucumber, and cherry peppers. To a food processor, add jalapeno peppers, brown mustard, apple cider vinegar, agave syrup, and soy sauce. Pulse and process. Add this dressing over the veggies. Chill for 1 hr in the fridge. Then, add pepper and roasted ginger on top. Toss and serve.
