9. Bacon with Bok Choy
Cook bacon on medium heat in a skillet until done and crispy. Then, take out and keep 1 Tbsp. of the fat. Add in garlic, olive oil, red pepper flakes and onion. Cook on medium until onions begin to tenderize. Then, add bok choy and add lid to the skillet. Cook for 3-5 min. Take off lid and cook for 2 more min. until it is tender but crunchy. Add in the bacon and top with salt. Serve immediately, hot.
