1. Snacks for the Lunchbox
Veggie sticks with bean dip – This is a low fat treat. Take 215 g of canned, drained butterbeans and add in lemon juice, 1 crushed garlic clove, 1 Tbsp. chopped parsley, 1 Tbsp. chopped mint, 1 Tbsp. water and 2 tsp. olive oil. Make dippers from celery sticks, carrots or red pepper. Wrap them in kitchen paper to prevent drying prior to eating.
Smoothie with banana and raspberries – Mix 85 g of raspberries with 1 banana and 150 mL of orange juice. Blend up and serve in a glass.
Custard with cinnamon and plum – Add 1 tsp. butter to 1 Tbsp. honey, 2 plums (1/4ed), ground cinnamon, vanilla extract, and 2 tsp. of water. Cover and heat for 3 min. in the microwave on High. Cool and add fruit into a container. Add 2-3 Tbsp. of the custard on top. Chill in the fridge, sealed, prior to serving.
Yogurt with apricots and granola – Add 200 g of oats to 1 Tbsp. sunflower oil and 2 Tbsp. honey. Bake spread out in a pan at 200C (fan) or 180C (gas 6). Bake for 14 min. Add in 150 g of dried fruit. Serve with 100 mL of yogurt, 1 Tbsp. sugar-free apricot jam. The granola should be stored in an airtight container prior to using.
Muffins with pineapple and carrots – Add 140 g of flour to 85 g wholemeal flour, ½ tsp. soda bicarbonate, a dash of salt and 2 tsp. of cinnamon. Separately, mix up 100 g golden caster sugar with 150 mL of sunflower oil. Add in 200 g of carrots (cooked and mashed), 3 pineapple slices (cubed from cans), 2 Tbsp. pineapple juice (from can), 1 tsp. vanilla extract and 1 egg. Add in 50 g of sunflower seeds. Fold wet mix and dry together. Add parchment paper to each muffin tin hole. Add in mixture and top with sunflower seeds and bran. Bake for 20-25 min. at 200C (fan) or 180C (gas 6). Center should be done. Let cool.
