1. Fried Flautas
Add bell pepper and onion to 1 tsp. vegetable oil and cook on medium for 5 min. Put on medium/high heat and add in chicken breast. Cook for 10 min. until done. Then, shred up the chicken. Add in water and taco seasoning. Simmer for 10 min. to evaporate the liquid. Add in cheddar and take off the heat. Set aside. Then, add salsa layer to each corn tortilla. Add 2 Tbsp. chicken mixture to each tortilla. Roll up and add toothpicks to secure the tortillas. Then, add 2 c. oil (vegetable) to a skillet and heat to 375F (190C). Cook them in the oil for 4 min. each. Drain flautas on paper towels. Remove toothpicks and serve with more salsa on top.
