You will love the fresh sweet potato around the holidays. This is not the marshmallow-covered version and it is even more delicious. You can double it but add more cooking time as required.
You will need:
2 lbs. of peeled, quartered sweet potatoes (lengthwise). Also cut crosswise (1/4-in. thick).
4 Tbsp. unsalted butter (cut up into 4 pieces)
2 Tbsp. of heavy cream
1⁄2 tsp. of salt
1 tsp. of sugar
salt and black pepper to taste
