Easiest Gumbo Recipe

This recipe is a traditional Louisiana classic, straight from Cajun country! You will love it over rice. You will add lots of flavor by browning the chicken in the oil for the roux. File powder (sassafras leaves) thickens the dish, but don’t add when it is cooling to prevent stringiness. You can find file powder at most grocery stores.

You will need:

1 lb. of smoked sausage (cut into 1/4 in. rounds)

1/2 c. of vegetable oil

1 (4 lb.) of chicken (cut up as parts)

2/3 c. of general-purpose flour

2 c. of chopped onion

1 Tbsp. minced garlic

2 Tbsp. fresh parsley (chopped)

1/2 c. green onions (chopped)

2/3 c. green bell pepper (chopped finely)

2 lbs. of medium shrimp (peeled, deveined)

8 c. of water

file powder

salt to taste

black pepper to taste

2 bay leaves

1/8 tsp. of cayenne pepper

1 tsp. of dried thyme
