1. Sweet Potato-Spinach Quesadillas
Cook potatoes in the microwave on high for 15 min. Separately, boil vinegar, sugar, and peppercorns in a saucepan to dissolve the sugar. Add in onion slices to a heatproof bowl and add the vinegar mixture on top. Let sit for 10 min. Drain and put the onion slices on a plate. Let cool. Then, take the potato flesh out of the cooked potatoes. Mash up the flesh and add salt and pepper. Put this into 4 separate tortillas. Add 1 c. spinach and ¼ c. cheese to each. Add second tortilla on top of each. Cook each tortilla in a skillet on medium/high heat to melt the cheese (3 min. on each side). Serve on a plate. Cut as quarters and serve each with some of the pickled onions.
