Preheat the oven to 325 F (165 C). Add ricotta and eggs to a mixing bowl and mix on low. Add in prosciutto, salami, mozzarella, and ham. Combine all. Add a pastry to two 9-in pans. Put ½ the mixture in each. Add Parmesan over the pies and cover with another pastry. Add steam vents and crimp the edges. Bake for 1 hour until golden. Let cool on racks.
