1. Vegetable Mexican Tacos
In a skillet, cook carrots in oil on medium heat for about 5-10 min. Then, add onion and leeks and cook for 5-10 more min. Add in cumin, black beans, sweet potatoes, chili powder, oregano, salt, pepper, and cayenne pepper. Cook for 10 more min. Put the mixture in a bowl. In the same skillet, heat tortillas for about 30 sec. per side. Add avocado (mashed) to the tortillas and then add on the sweet potato mixture along with lime juice, cilantro, queso fresco, and salsa. Enjoy!
