1. Whole Wheat Blueberry Muffins

Set oven to 375F. Add paper liners to a muffin tin (12 c.). Add oats, flour, baking powder, pecans, flaxseed meal, baking soda and salt to a food processor and grind up finely. Then, make a mixture of sugar, butter, yogurt, orange juice and zest, vanilla and egg. Just add in the flour mixture, but without overmixing. Fold in blueberries. Put batter in each of the muffin cups. Bake for 22-25 min. in the oven.
