1. Spinach, Ricotta, and Eggplant with Fettuccine
Set grill on medium heat. Add oil over eggplant and add on ½ tsp. salt and ¼ tsp. pepper. Grill each for 5-6 min. on each side until tender. Then put on cutting board and cut up. Cook fettuccine meanwhile and keep ½ cup of the water after it is done. Drain and rinse. Put back in the same pot. On top of the fettuccine, add the eggplant, ¼ c. of the cooking water (reserved), spinach, vinegar, ¼ tsp. pepper and ½ tsp. salt. Serve with ricotta, more oil and red pepper (as desired).
