Here are some delicious variations on the classic Italian biscotti. Try them for any festive occasion.
1. Biscotti with Cinnamon Sugar
Preheat oven to 325 F (165 C). Line a cookie sheet with parchment. By sifting, add together 1.5 tsp. cinnamon, flour, salt, and baking powder. Then, cream together butter with 2/3 c. sugar. Add in 1 beaten egg, vanilla and an egg yolk. Add in dry ingredients. This makes a dough that needs to be halved into two logs (9 in. x 1.5 in). Put them on the cookie sheet and make them flattened. Brush with a beaten egg and bake (25-30 min.) until brown. Let cool for 15 min. Then, slice them into ½ in. pieces, put back on the baking sheet, add sprinkles of sugar with cinnamon, and bake for 15-20 more min. to toast. Cool and store in sealed container.
