Top Miso Soup Recipe

This Japanese miso soup is tasty and great for vegans and vegetarians. Enjoy!

You will need:

1/4 small pumpkin (peeled, seeded, cubed)

2 Tbsp. of soy sauce

2 oz of buckwheat noodles

1 (2 inch) fresh ginger piece (cut up into strips)

2 tsp. of sesame oil

3 1/2 oz. of tofu (firm, cubed)

2 tsp. of miso paste

2 green onions (finely chopped, diagonally)

2 Tbsp. of pickled ginger

2 red chile peppers (large, diagonally sliced)

2 Tbsp. of sesame seeds (toasted)

2 Tbsp. fresh cilantro (chopped)
