Top Recipe for Gluten-Free Pie Crust

This pie crust has a great flaky texture, which is often hard to get when you use gluten-free ingredients. It will be nice and toasted if you bake it thoroughly. You can easily double the recipe to make two pie crusts.

Ingredient list:

1.25 c. gluten-free flour or brown rice flour blend (King Arthur or similar)

2 tsp. of Instant ClearJel (optional) (it may not be packed in a gluten-free facility)

Sugar (1 tbsp.)

Xanthan gum (1/2 tsp.)

1/2 tsp. of salt

3/8 c. or 6 tbsp. of butter (cold)

1 egg (large)

2 tsp. vinegar or lemon juice
